This has to be one of my favourite comfort food recipes. The carrots in this recipe make it light, fluffy, and sweet, while the potatoes add a layer of creaminess and comfort. This is the perfect recipe to bring as a side dish to a dinner party. It is also an amazing way to get in some nutrient dense vegetables into your diet. Regardless of how or when you eat it, it will be a crowd pleaser I promise ❤️🥕🥔
Ingredients:
- 4-5 small to medium potatoes, cubed
- 3-4 heaping cups of carrots, chopped. The best guide is to try to make your amounts to be equal parts potatoes and carrots.
- 0.75 cups of sour cream (note - if you don’t have access to clean sour cream that is free of gums and stabilizers, you substitute it with full fat greek yogurt mixed with the juice of half a lemon)
- 6 tbsp of salted butter
- Salt to taste
Instructions:
1. Bring the potatoes and carrots to a boil, and boil until very soft. Tip - cut potatoes into larger chunks than the carrots because the carrots cook slower.
2. Once ready, drain the mix and reserve 1/2 cup of the water. Let the mix cool a bit (approx 5 mins)
3. Add in the remaining ingredients and mash/ use a hand blender until it reaches a smooth consistency. Use the reserved water to help with the blending process
4. Garnish with fresh herbs and enjoy!
