Ukrainian Borscht Recipe

Make your Baba proud with this delicious and nourishing borscht recipe!

Ingredients:

Note 1: This recipe yields a large amount of borscht. It can easily be halved and is very forgiving.

Note 2: DIY Sour Cream can easily be made by mixing 1 cup of cream with the juice of 1 lemon. Mix the two ingredients well, and after mixing, let it sit in the fridge for at least an hour. This is a good alternative to store bought sour creams that have added gums and stabilizers in it to achieve its thick texture. 

Instructions:

1.     Brown the pork and add it to the broth. Bring the mix to a boil

2.     Add in shredded beets and boil them until they have lost a bit of their colour

3.     Add in carrots and potatoes. Boil until the potatoes can be easily pierced with a fork

4.     Add in cabbage, tomatoes, and dill (and salt and pepper if needed). Simmer for 20 mins

5.     While the soup is simmering, fry up the onions in bacon fat until soft. Add in the tomato paste and dilute the mixt with approximately 1 cup of water. Add the mix into the soup

6.     Add in chopped garlic, honey, and vinegar. Stir well.

7.     Serve soup with sour cream, parsley, and more dill.
